Tart cranberries, sweet Medjool dates, and bold pomegranate juice come together in a sparkling drink that feels genuinely festive without a drop of alcohol or added sugar. The homemade cranberry-date concentrate is the real star here — simmering the fruit and dates together coaxes out a deep, jammy sweetness that no store-bought mixer can replicate. A squeeze of fresh lime keeps everything bright and balanced, while the chilled sparkling water gives it that satisfying fizz. Every single ingredient in this spritzer is clean and compliant, so there's zero label-reading stress and no hidden additives to worry about. It's the kind of drink you can confidently serve at a dinner party or a holiday gathering and watch everyone reach for a second glass. Garnish with fresh mint and a handful of pomegranate arils and it looks almost too pretty to drink — almost.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
