This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart cranberries, deep pomegranate, and a bright hit of lime all lifted by chilled sparkling water. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until soft, then pressed through a strainer to capture every drop of that jewel-toned, naturally sweetened liquid. No added sugar, no artificial anything — the dates do all the heavy lifting in the sweetness department. It's completely compliant with Whole30 guidelines and naturally free from any heat-producing compounds, so everyone at the table can sip without a second thought. Pouring the concentrate into a pitcher with pomegranate juice and lime before topping with sparkling water means the whole thing comes together in minutes once your concentrate is ready. Garnish with fresh mint and a handful of pomegranate arils and it looks like something you'd order at a fancy brunch spot. It's festive enough for a holiday spread but easy enough to make on a random Tuesday afternoon.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
