This sparkling drink is the kind of thing that makes you forget you're not sipping something far more indulgent. A homemade cranberry-date concentrate forms the backbone of the whole recipe — simmered until the cranberries burst and the Medjool dates melt into a naturally sweet, ruby-red syrup that you press through a strainer for a silky, concentrated base. That concentrate gets stirred together with 100% pomegranate juice and a bright hit of fresh lime before being poured over ice and topped with chilled sparkling water. The result is tart, lightly sweet, and genuinely refreshing — no syrups, no added sugar, no artificial anything. It's a great option when you want something festive and fizzy without reaching for coffee, tea, or anything with a caffeine kick. Garnish with fresh mint and a handful of pomegranate arils and it looks stunning on a table, whether you're hosting brunch or just treating yourself on a weeknight.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
