This festive spritzer is the kind of drink that makes a regular Tuesday feel like a celebration — deep ruby red, bubbling with sparkling water, and layered with tart cranberry, sweet pomegranate, and a bright hit of fresh lime. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until everything is soft and jammy, then pressed through a strainer to capture all that rich, naturally sweetened flavor. No refined sugar, no artificial anything — just real fruit doing all the heavy lifting. It comes together in a pitcher and pours beautifully over ice, making it just as impressive for a dinner party as it is for a solo afternoon treat. A few pomegranate arils and a sprig of fresh mint on top take it from simple to stunning with almost zero extra effort. Store-bought sparkling drinks often come with long ingredient lists and hidden additives, so mixing your own means you know exactly what's in the glass. It's refreshing, completely plant-based, and naturally free from the common allergens that tend to sneak into packaged beverages.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
