Tart cranberries, sweet Medjool dates, and bold pomegranate juice come together in a sparkling drink that feels genuinely festive without a drop of alcohol or any questionable additives. The homemade cranberry-date concentrate is the real star here — simmering the fruit down and pressing it through a strainer coaxes out a rich, jewel-toned syrup that store-bought mixers simply can't match. A squeeze of fresh lime brightens everything up, and the chilled sparkling water gives it that satisfying fizz you want in a special-occasion sip. Because every ingredient is whole and unprocessed, you never have to squint at a label wondering what's hiding in the fine print. Garnished with fresh mint and a scatter of pomegranate arils, it looks stunning in the glass — the kind of drink that makes guests assume you spent way more effort than you actually did. It's equally at home at a holiday table or a casual weekend brunch, and it comes together with nothing more than a saucepan and a strainer.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
