Festive drinks are one of the trickiest categories to navigate when you're avoiding synthetic dyes, since most store-bought sparkling beverages and cocktail mixers are loaded with artificial colors that give them their eye-catching hues. This spritzer gets its stunning deep ruby color entirely from real cranberries, pomegranate juice, and Medjool dates — no shortcuts, no lab-made pigments. The cranberry-date concentrate is the secret weapon here: simmering fresh or frozen cranberries with soft, sweet dates creates a rich, naturally sweetened base that adds body and depth without any refined sugar or additives. A squeeze of fresh lime juice brightens everything up, and the chilled sparkling water gives it that celebratory fizz you actually want in a special-occasion drink. Poured over ice and finished with pomegranate arils and a sprig of mint, it looks genuinely impressive on a table. It's the kind of drink that satisfies the crowd whether they're following a specific protocol or just want something beautiful and real in their glass.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
