This sparkling drink is the kind of thing that makes a mocktail feel genuinely special — tart, jewel-toned, and refreshing in a way that store-bought sparkling beverages rarely manage. The secret is a quick homemade cranberry-date concentrate, where fresh or frozen cranberries are simmered with Medjool dates until everything is soft and bursting, then pressed through a strainer to capture a deeply flavored, naturally sweet syrup. That concentrate gets stirred together with 100% pomegranate juice and fresh lime juice before being topped off with chilled sparkling water, so every sip has real fruit flavor with nothing artificial hiding in the background. Bottled flavored drinks and cocktail mixers are notorious for sneaking in natural and artificial flavor additives, which makes this from-scratch approach such a satisfying alternative. The whole process is straightforward and the result looks stunning in the glass, especially finished with pomegranate arils and a sprig of fresh mint. It's equally at home at a holiday table or a casual weekend brunch, and it scales up easily if you're pouring for a crowd.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
