This sparkling drink is the kind of thing that looks like it came from a fancy cocktail bar but comes together entirely from whole, plant-based ingredients — no mystery additives, no mammal-derived products to worry about. The base starts with a homemade cranberry-date concentrate, where fresh or frozen cranberries and soft Medjool dates are simmered together and strained into a naturally sweet, deeply tart syrup that does all the heavy lifting on flavor. That concentrate gets stirred together with 100% pomegranate juice and a bright squeeze of fresh lime, then topped off with chilled sparkling water for a fizzy, jewel-toned finish. It's refreshing in a way that feels genuinely celebratory, especially when you pile in the ice and scatter a few pomegranate arils on top. Because every ingredient here is fruit, water, or citrus, it sidesteps the kinds of store-bought drink concerns that can make entertaining or everyday sipping feel complicated. Serve it at a holiday gathering or just on a Tuesday when you want something that feels a little special — either way, it delivers.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
