This festive spritzer is the kind of drink that makes a regular Tuesday feel like a celebration. Tart cranberries and Medjool dates are simmered together and pressed into a rich, naturally sweet concentrate that forms the backbone of the whole drink — no refined sugar, no artificial anything. Pomegranate juice and a squeeze of fresh lime juice bring brightness and depth, while chilled sparkling water lifts everything into something genuinely refreshing. Because every ingredient is straightforward and whole, you never have to squint at a label wondering what's hiding inside. It's an especially great find for anyone navigating nut-free entertaining, since so many festive mocktails and punches sneak in almond extract or almond-based syrups for sweetness. Here, the dates do all that work naturally, and the result is gorgeous — deep ruby red, fizzy, and begging for a sprig of mint and a handful of pomegranate arils on top.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
