This festive sparkling drink proves that skipping added salt — and added sugar — doesn't mean skipping flavor. Tart cranberries and naturally sweet Medjool dates are simmered together into a rich concentrate that does all the heavy lifting, delivering deep, jammy complexity without a single grain of refined sweetener. Pure pomegranate juice and a squeeze of fresh lime bring brightness and a gorgeous ruby color that makes this feel genuinely celebratory. The whole thing comes together in a pitcher, so it's just as easy to make for a crowd as it is for a quiet night in. Topped with chilled sparkling water and a handful of pomegranate arils, it looks like something you'd order at a fancy restaurant — but every ingredient is clean, whole, and exactly what you'd want it to be. It's the kind of drink that makes you forget you're being mindful at all.

Combine the cranberries, water, and pitted dates in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries burst and the dates are completely soft, about 8–10 minutes.
Remove from heat and press the mixture through a fine-mesh strainer into a measuring cup or bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about ½ cup of cranberry-date concentrate.
