Dried smoked paprika can sometimes contain mold toxins, but the small amount in this recipe—about 1/4 teaspoon per serving—is likely tolerated by many. When possible, use a recently purchased organic spice and store it tightly closed in a cool, dry place. If you prefer to always avoid smoked paprika, please tap it and change its rating to Red.

kalamata olives

Preheat the oven to 425°F (220°C). In a small bowl, combine the cumin, smoked paprika, coriander, turmeric, 1/2 tsp salt, and black pepper. Pat the chicken thighs dry with paper towels, then rub them all over with 2 tbsp olive oil followed by the spice mixture.
Heat a 12-inch oven-safe skillet over medium-high heat until very hot, about 2 minutes. Place the chicken thighs skin-side down and sear undisturbed for 5 minutes, until the skin is deep golden and releases easily from the pan. Flip the thighs and transfer the skillet to the oven.
