Lobster bisque feels like the kind of indulgent, restaurant-only dish that should be off-limits during a reset — but this version proves otherwise. The rich, velvety base comes from full-fat coconut milk and a deeply flavored shell stock you build right at home, so there's no cream, no flour, and no compromises hiding in the bowl. Arrowroot starch does the thickening work beautifully, giving you that signature bisque texture without any grain-based shortcuts. Ghee, smoked paprika, tomato paste, and a whisper of cayenne layer in serious depth, making this taste far more complex than the ingredient list suggests. The lobster itself gets added at the very end and just warmed through, keeping it tender and sweet rather than rubbery. It serves four and feels genuinely special — the kind of meal you'd make for a dinner party without mentioning it's compliant, because nobody would ever guess.

If using live lobster tails, bring a large pot of salted water to a boil. Add the tails and cook for 6–8 minutes, until the shells are bright red and the meat is opaque throughout and reaches 145°F (63°C) on an instant-read thermometer. Transfer to a cutting board and let cool for 5 minutes. If using pre-cooked whole lobsters, skip the boiling step and proceed directly to shell removal.
Twist or cut the lobster tails to remove the meat. Reserve all shells and any juices. Roughly chop the lobster meat into bite-sized pieces, cover, and refrigerate until needed.
