This refreshing fizzy drink is the kind of thing that makes you forget you ever needed a cocktail in the first place. The real star is a homemade ginger-date syrup — Medjool dates and fresh ginger are simmered together, then strained into a silky, naturally sweet concentrate that brings serious depth to every sip. Bright lemon juice cuts right through the warmth of the ginger, and sparkling water lifts the whole thing into something that feels genuinely celebratory. Every single ingredient here is completely free of tree nuts, so there's no label-scanning or cross-contamination stress to worry about. It's also a great example of how whole, simple ingredients can produce something that tastes far more complex than the effort involved. A few lemon slices and fresh mint on top make it look like something you'd order at a nice brunch spot — but you made it in your own kitchen.

Combine the pitted dates, water, and sliced ginger in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the dates are completely soft and beginning to break apart, about 5 minutes.
Remove from the heat and let the mixture cool for 10 minutes, then press it through a fine-mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about 1/4 cup of ginger-date syrup.
