Bright, zingy, and genuinely refreshing, this sparkling drink is the kind of thing you'll want to sip all afternoon. The base is a homemade ginger-date syrup — just Medjool dates, fresh ginger, and water simmered together and strained into a silky, naturally sweet concentrate. That syrup gets paired with fresh-squeezed lemon juice and plain sparkling water, so every ingredient is clean, whole, and completely transparent. During pregnancy, store-bought sodas and flavored sparkling drinks can be a minefield of caffeine, artificial sweeteners, and mystery "natural flavors" — this one sidesteps all of that with nothing but real food. The ginger is a particularly welcome touch, since it's long been a go-to for easing nausea and settling an unsettled stomach. Served over ice with a lemon slice and a sprig of fresh mint, it looks and feels like something from a fancy café, but it comes together in about fifteen minutes with one small saucepan and a strainer. It's the kind of mocktail that doesn't feel like a compromise at all.

Combine the pitted dates, water, and sliced ginger in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the dates are completely soft and beginning to break apart, about 5 minutes.
Remove from the heat and let the mixture cool for 10 minutes, then press it through a fine-mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about 1/4 cup of ginger-date syrup.
