This bright, bubbly drink is the kind of thing that makes you forget you ever needed a sugary soda to feel refreshed. The star of the show is a homemade ginger-date syrup — simmered until the Medjool dates go completely soft and the ginger releases all its warm, spicy depth — then strained into a silky, naturally sweet concentrate. Fresh lemon juice cuts right through that sweetness, and when you pour everything over ice and top it with sparkling water, the result is genuinely fizzy and satisfying. Every single ingredient here is naturally free of dairy, so there's no swapping or substituting required — it just works. The whole process is straightforward enough to pull off on a weeknight, and the syrup can be made ahead so you're just assembling glasses when you're ready to drink. Garnish with a lemon slice and a sprig of fresh mint if you want it to look as good as it tastes.

Combine the pitted dates, water, and sliced ginger in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the dates are completely soft and beginning to break apart, about 5 minutes.
Remove from the heat and let the mixture cool for 10 minutes, then press it through a fine-mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about 1/4 cup of ginger-date syrup.
