This bright, bubbly drink is the kind of thing that makes you forget you ever needed a sugary soda. The star of the show is a homemade ginger-date syrup — simmered until the Medjool dates go completely soft and the ginger releases all its warm, spicy depth — then strained into a silky, naturally sweet concentrate. Combined with fresh-squeezed lemon juice and sparkling water poured slowly over ice, the result is genuinely refreshing and feels a little fancy without much effort at all. Every single ingredient here is straightforward and whole, so you never have to squint at a label wondering what's hiding inside. Nut-based syrups and flavored sparkling waters can be sneaky culprits when you're avoiding tree nuts, but this one is built entirely from scratch, so you know exactly what's in your glass. A sprig of fresh mint and a lemon slice on the rim take it from weeknight hydration to something you'd happily serve at brunch.

Combine the pitted dates, water, and sliced ginger in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the dates are completely soft and beginning to break apart, about 5 minutes.
Remove from the heat and let the mixture cool for 10 minutes, then press it through a fine-mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about 1/4 cup of ginger-date syrup.
