Combine the pitted dates, water, and sliced ginger in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the dates are completely soft and beginning to break apart, about 5 minutes.
Remove from the heat and let the mixture cool for 10 minutes, then press it through a fine-mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. You should have about 1/4 cup of ginger-date syrup.
