In a large bowl, whisk together the avocado oil, coconut aminos, allspice, cinnamon, smoked paprika, thyme, black pepper, 1 tsp kosher salt, cayenne, ground ginger, garlic powder, and onion powder until combined. Add the chicken thighs and turn to coat thoroughly. Let marinate at room temperature for 30 minutes, or cover and refrigerate for up to 8 hours.
Preheat the oven to 425°F (220°C). While the oven heats, pulse the cauliflower florets in a food processor in two batches until broken down into rice-sized pieces, about 8–10 pulses per batch. Spread the cauliflower rice on one half of a large baking sheet, drizzle with 1 tbsp avocado oil, and season with ½ tsp kosher salt; toss to coat.
