A deeply seared chuck roast gets rubbed with a fragrant paste of garlic, rosemary, and thyme before it braises low and slow alongside carrots, parsnips, baby potatoes, and sweet onion wedges. The braising liquid — built from bone broth, a splash of apple cider vinegar, and coconut aminos for savory depth — turns silky and rich as everything cooks down together in the Dutch oven. By the time it comes out of the oven, the meat pulls apart with a fork and the vegetables are tender enough to soak up every bit of that pan sauce. It's a cozy, no-fuss Sunday dinner that spoons beautifully over a bowl and needs nothing more than a scatter of fresh parsley to finish. This one holds up perfectly on a gluten free table, letting the slow-cooked beef and herby aromatics do all the talking.
