French onion soup is one of those deeply comforting classics that usually feels completely off the table when you're eating clean — between the wine, the flour-thickened broth, and the blanket of melted gruyère, the traditional version is basically a no-go. This version rebuilds it from the ground up using ingredients that actually work: ghee for richly caramelizing three pounds of yellow onions low and slow, beef bone broth for that deep, savory backbone, and a splash of coconut aminos and apple cider vinegar to round out the flavor without any off-limits additions. The result is a broth that tastes like it simmered all day — because the onions alone cook for nearly an hour until they're mahogany, jammy, and almost sweet. Instead of a bread crouton, thick cauliflower steaks are roasted at high heat until golden and tender, then floated right on top of each bowl and finished in the oven so everything gets hot and unified together. It's a genuinely satisfying bowl of soup — rich, savory, and a little bit dramatic to serve — and it makes four generous portions without a single compromise you'll actually notice.

Preheat the oven to 425°F (220°C). Arrange the cauliflower steaks on a rimmed baking sheet in a single layer. Brush both sides with the 2 tbsp olive oil and season with 1/2 tsp salt and 1/4 tsp black pepper.
Roast the cauliflower steaks for 20 minutes, then flip carefully with a wide spatula and roast for another 15–20 minutes, until deep golden-brown on both sides and tender when pierced with a knife. Remove from the oven and set aside. Reduce the oven temperature to 375°F (190°C).
