In a shallow dish, whisk together the coconut milk, lime juice, lime zest, ground cumin, 1/2 tsp kosher salt, and black pepper. Measure out and reserve 1/4 cup of this marinade in a small bowl and set aside — this portion will be used for the sauce and must not contact the raw fish. Add the cod fillets to the remaining marinade in the dish, turning to coat. Marinate at room temperature for 20 minutes.
Lift the cod fillets from the marinade, letting the excess drip off, and pat them lightly dry with paper towels. Discard the used marinade. Heat the avocado oil in a large (12-inch) skillet over medium-high heat until shimmering.
