Snack sticks are one of those convenience foods that almost always come loaded with sugar, soy, or mystery additives — which makes finding a compliant version at the grocery store basically impossible. This homemade version uses nothing but ground beef, collagen casings, and a lineup of pure spices to deliver that smoky, savory, satisfying chew you're craving. The seasoning blend — smoked paprika, garlic powder, black pepper, a little heat from red pepper flakes and optional cayenne — is bold without being complicated, and every single ingredient earns its place. Prague Powder #1 does the real work here, curing the meat overnight so you get that classic snack stick texture and color without any shortcuts or fillers. You can run them through a smoker for deep, wood-kissed flavor or use your oven on its lowest setting if you don't have a smoker on hand — both methods bring the internal temp to a safe 160°F. Each batch makes 12 sticks, so they're perfect for meal prepping a week's worth of grab-and-go protein. Once you've made your own, going back to store-bought is going to feel like a serious downgrade.

In a large mixing bowl, combine the ground beef, curing salt, kosher salt, black pepper, smoked paprika, garlic powder, onion powder, mustard powder, red pepper flakes, and cayenne (if using). Add the cold water. Mix with your hands or a stand mixer fitted with the paddle attachment on low speed for 2–3 minutes, until the mixture is tacky and holds together when pressed between your fingers.
Cover the bowl tightly with plastic wrap and refrigerate for at least 8 hours or overnight to allow the curing salt to work through the meat and the flavors to develop.
