Breakfast gets a serious upgrade when sweet potatoes, tart Granny Smith apple, savory pork sausage, and warm spices all come together in a single cast iron skillet. The combination of cinnamon and smoked paprika sounds unexpected, but it creates this deeply satisfying sweet-and-savory balance that makes the whole dish feel intentional rather than thrown together. Crispy-edged sweet potatoes and caramelized onion give it real substance, while the apple softens just enough to add brightness without turning to mush. Eggs are nestled right into the hash and cooked in the same pan, so you get a complete, protein-packed meal without a pile of dishes waiting for you afterward. Every ingredient here — the ghee, the sausage, the spices — is chosen to stay fully on-program, so there's no label-squinting or last-minute substitutions required. It serves four, which makes it just as practical for a weekend family breakfast as it is for meal-prepping a few days of solid morning fuel. Finish it with a handful of fresh parsley straight from the skillet and it looks as good as it tastes.

Heat a 12-inch cast iron skillet over medium-high heat. Add the sausage and cook, breaking it into small crumbles with a spatula, until browned and cooked through to 160°F (71°C) on an instant-read thermometer, about 6–8 minutes. Transfer the sausage to a plate, leaving any rendered fat in the skillet.
Add 1 tablespoon of the ghee to the skillet. Add the sweet potatoes in a single layer and cook undisturbed over medium-high heat for 4 minutes, until the undersides are golden and beginning to crisp. Stir and continue cooking, stirring every 2 minutes, until the sweet potatoes are tender when pierced with a fork and golden on most sides, about 8–10 minutes total. Transfer to the plate with the sausage.
