Heat a 12-inch cast iron skillet over medium-high heat. Add the sausage and cook, breaking it into small crumbles with a spatula, until browned and cooked through to 160Β°F (71Β°C) on an instant-read thermometer, about 6β8 minutes. Transfer the sausage to a plate, leaving any rendered fat in the skillet.
Add 1 tablespoon of the ghee to the skillet. Add the sweet potatoes in a single layer and cook undisturbed over medium-high heat for 4 minutes, until the undersides are golden and beginning to crisp. Stir and continue cooking, stirring every 2 minutes, until the sweet potatoes are tender when pierced with a fork and golden on most sides, about 8β10 minutes total. Transfer to the plate with the sausage.
