This drink is the definition of effortless elegance — pale, fragrant, and genuinely refreshing in a way that store-bought flavored waters never quite manage. White tea is steeped low and slow at just below a simmer, which keeps its flavor delicate and floral rather than bitter or astringent. Raw honey dissolves right into the warm tea, adding a subtle sweetness that plays beautifully against the brightness of fresh lemon juice. Cucumber and ginger steep together in the pitcher, infusing every sip with cool, clean flavor and just a little warmth. The whole thing comes together with nothing but whole, simple ingredients — no flavor syrups, no preservatives, and absolutely no nuts or nut-derived additives to worry about. A few mint leaves and a ribbon of cucumber on the rim make it look like something you'd order at a spa, but it's genuinely easy to pull off at home.

Bring 2 cups of water to 175°F (80°C) in a small saucepan — just below a simmer, with small bubbles beginning to form at the bottom. Remove from heat, add the white tea bags, and steep for 3–4 minutes until the liquid is pale gold. Remove the tea bags without squeezing them.
Stir the raw honey into the hot tea until fully dissolved. Let the sweetened tea cool to room temperature, about 15–20 minutes.
