This drink is the definition of effortless elegance — pale, delicate white tea layered with cool cucumber, bright lemon, and a gentle kick of fresh ginger. It's the kind of thing you'd pay too much for at a spa, but it comes together in your own kitchen with barely any effort. White tea is steeped low and slow at just below a simmer to protect its subtle, slightly floral flavor, and raw honey dissolves right in to sweeten things without overpowering the whole glass. Because every ingredient here is straightforward and whole, there's no need to scan labels for hidden additives or worry about unexpected tropical oils sneaking into your drink. The cucumber and ginger infuse as the pitcher chills, so the longer it sits, the more refreshing it gets. Serve it over ice with a sprig of mint and a few cucumber slices for a presentation that looks genuinely impressive with almost zero extra work.

Bring 2 cups of water to 175°F (80°C) in a small saucepan — just below a simmer, with small bubbles beginning to form at the bottom. Remove from heat, add the white tea bags, and steep for 3–4 minutes until the liquid is pale gold. Remove the tea bags without squeezing them.
Stir the raw honey into the hot tea until fully dissolved. Let the sweetened tea cool to room temperature, about 15–20 minutes.
