This drink is the kind of thing you make once and then find yourself craving all summer long. Pale gold white tea forms a delicate, lightly floral base, while fresh cucumber and ginger steep right in the pitcher to build layers of cool, bright flavor. A squeeze of lemon and a spoonful of raw honey round everything out without overpowering the subtlety of the tea. Every single ingredient here is straightforwardly plant-based, which means there's no need to scan labels or second-guess anything — just simple, whole foods doing exactly what they're supposed to do. The ginger adds a gentle warmth that keeps the drink from feeling flat, and the cucumber garnish makes it look like something you'd pay too much for at a spa. It's refreshing, it's elegant, and it comes together in a pitcher with almost no effort at all.

Bring 2 cups of water to 175°F (80°C) in a small saucepan — just below a simmer, with small bubbles beginning to form at the bottom. Remove from heat, add the white tea bags, and steep for 3–4 minutes until the liquid is pale gold. Remove the tea bags without squeezing them.
Stir the raw honey into the hot tea until fully dissolved. Let the sweetened tea cool to room temperature, about 15–20 minutes.
