Fresh citrus does all the heavy lifting here, "cooking" the fish through acid alone — no heat, no preservatives, no additives you can't pronounce. That matters because BHA and BHT are synthetic antioxidants that sneak into a surprising number of packaged and processed foods, including some store-bought seafood products and bottled condiments. Every single ingredient in this bowl is whole and recognizable: fresh white fish, real lime and lemon juice, grated ginger, ground turmeric, crisp cucumber, jalapeño, red onion, creamy avocado, cilantro, and a drizzle of extra virgin olive oil. The turmeric adds a gorgeous golden hue and a warm, earthy undertone that plays beautifully against the bright citrus and the gentle heat from the jalapeño. After just 20 minutes in the fridge, the fish turns opaque and firm — silky, tender, and ready to eat. Folding in the avocado at the end keeps everything lush and fresh, making each bite a little different from the last. It's the kind of dish that feels impressive enough for guests but is genuinely simple to pull together on a weeknight.
