Creamy, herby, and deeply satisfying, this white bean dip is the kind of appetizer that disappears from the table before anyone realizes how simple it was to make. Cannellini beans get blended with fragrant garlic-rosemary oil, bright lemon juice, a hint of zest, and a touch of cumin — the result is silky smooth with layers of flavor that taste far more complex than the ingredient list suggests. Blooming the garlic and rosemary together in warm olive oil first is the move that makes everything sing, infusing the fat with an aromatic depth that carries through every bite. A drizzle of good extra virgin olive oil on top and a pinch of red pepper flakes finish it off beautifully. This is a naturally meat-free spread built entirely around pantry staples and fresh herbs, so there's zero guesswork about what's in it — no deli counter, no processed additives, just clean, wholesome ingredients. Serve it with warm pita, crackers, or a spread of crudités and watch it become the most requested thing you bring to a gathering.

Heat 2 tbsp of the olive oil in a small skillet over medium-low heat. Add the garlic and rosemary and cook, stirring frequently, until the garlic is softened and just golden at the edges and the rosemary is fragrant, about 3–4 minutes. Watch closely, as the garlic can brown quickly. Remove from heat and let cool for 2 minutes.
Transfer the garlic-rosemary oil to a food processor. Add the cannellini beans, lemon juice, lemon zest, cumin, salt, and black pepper. Process until the mixture begins to come together, about 30 seconds.
