Add the watermelon cubes, lime juice, honey, grated ginger, and cold water to a blender. Blend on high until completely smooth, about 30–45 seconds.
Set a fine-mesh strainer over a pitcher and pour the blended mixture through it, pressing gently with a spoon to extract as much liquid as possible. Discard the solids left in the strainer.
