Few things hit harder on a hot day than a bowl of ice-cold gazpacho, and this watermelon version takes that classic summer refreshment somewhere genuinely exciting. Sweet, juicy watermelon blends with ripe tomatoes, crisp cucumber, and a kick of jalapeño to create a soup that's bright, a little spicy, and completely addictive. Fresh mint and a squeeze of lime tie everything together with an herby, citrusy lift that makes each spoonful feel almost effervescent. The whole thing gets strained through a fine-mesh sieve, so the texture is silky smooth and restaurant-worthy without any fuss. Tree nut concerns are a total non-issue here — every ingredient is a straightforward fruit, vegetable, or pantry staple, so you can blend away with complete confidence. A drizzle of good olive oil and a pinch of flaky sea salt at the finish elevate it from casual to genuinely impressive. Make it ahead, let it chill, and it's ready to wow guests or just reward yourself after a long, sweaty afternoon.
