Summer in a bowl doesn't get more refreshing than this chilled watermelon gazpacho. Sweet, juicy watermelon blends with ripe tomatoes, crisp cucumber, and a kick of jalapeño to create something that tastes simultaneously bright, savory, and a little unexpected. A squeeze of fresh lime juice and a handful of mint tie everything together with a cool, herby finish that makes each spoonful feel like a breeze on a hot day. The whole thing gets strained through a fine-mesh sieve, so the texture is silky smooth and restaurant-worthy without any complicated technique. Since every ingredient here is a whole fruit, vegetable, or pantry staple, there's nothing hidden to worry about — no eggs, no dairy, no surprises. A drizzle of good olive oil and a pinch of flaky sea salt right before serving elevate it from simple to genuinely stunning. Make it ahead, let it chill, and you've got an effortless starter or light lunch that practically cooks itself.
