These thick, savory South Indian pancakes are built entirely from fermented rice and lentil batter, topped with a colorful scatter of tomato, red onion, green bell pepper, and fresh cilantro — then cooked until the underside is golden and the vegetables are just lightly charred at the edges. The result is something deeply satisfying: crispy on the outside, tender and slightly tangy within, with that unmistakable fermented depth that only comes from a proper overnight rest. Because every ingredient here is plant-based and naturally free from red meat and animal products, there's no need to scrutinize labels or worry about hidden proteins sneaking into your meal. The fermentation step does real work, both developing flavor and making the batter easier to digest, so the extra planning time is genuinely worth it. A good cast iron griddle or non-stick skillet is your best friend for getting that even golden crust without sticking. Serve them hot straight off the pan with coconut chutney or sambar on the side, and they become a complete, nourishing meal that feels special without being complicated.

Combine the idli rice, urad dal, and fenugreek seeds in a large bowl. Cover with cold water by at least 2 inches and soak for 6–8 hours or overnight.
Drain the soaked rice and lentils, reserving about 1 cup of the soaking water. Transfer to a blender and blend, adding the reserved soaking water a little at a time, until the batter is smooth and pourable — it should be slightly thicker than a crepe batter but thinner than a pancake batter, with a consistency similar to heavy cream. You may need up to 1 cup of water total.
