Uttapam is one of South India's most satisfying street foods — thick, slightly sour fermented pancakes loaded with fresh vegetables and cooked until golden on a hot griddle. This version is built entirely from whole, recognizable ingredients: rice, lentils, fenugreek seeds, and a colorful scatter of tomato, onion, bell pepper, and cilantro pressed right into the batter before it sets. Because everything here is made from scratch with no packaged seasonings, flavor enhancers, or processed condiments, you know exactly what's going into every bite. The fermentation step is what makes these uttapam so special — soaking the rice and dal overnight develops a gentle tang and a light, airy texture that no shortcut can replicate. Cooking them on a cast iron griddle gives the underside a beautifully crisp, golden crust while the toppings get just enough char to bring out their sweetness. Served hot alongside coconut chutney or sambar, this is a deeply comforting meal that works just as well for a lazy weekend brunch as it does for a weeknight dinner. Once you nail the batter consistency and fermentation timing, this becomes the kind of recipe you'll come back to again and again.

Combine the idli rice, urad dal, and fenugreek seeds in a large bowl. Cover with cold water by at least 2 inches and soak for 6–8 hours or overnight.
Drain the soaked rice and lentils, reserving about 1 cup of the soaking water. Transfer to a blender and blend, adding the reserved soaking water a little at a time, until the batter is smooth and pourable — it should be slightly thicker than a crepe batter but thinner than a pancake batter, with a consistency similar to heavy cream. You may need up to 1 cup of water total.
