South Indian cooking has a beautiful tradition of fermented batters, and this thick, savory pancake is one of its most satisfying expressions. The batter starts with just rice, urad dal, fenugreek seeds, and salt — soaked, blended, and left to ferment naturally overnight until it develops that signature gentle tang. No packaged mixes, no preservatives, no additives you can't pronounce — just whole ingredients doing exactly what they've done for centuries. That matters a lot when you're avoiding synthetic antioxidants like BHA and BHT, which sneak into many processed grain products and cooking oils; here, every component is straightforward and clean. The toppings — diced tomato, red onion, green bell pepper, fresh cilantro, and a scatter of cumin seeds — get pressed right into the batter before it sets, so each bite is loaded with color and crunch. A cast iron griddle gives the underside a deep golden crust while the vegetables catch just enough heat to char lightly at the edges. Serve them hot with coconut chutney or sambar and you've got a breakfast or brunch that feels genuinely special without a single ingredient you'd need to second-guess.

Combine the idli rice, urad dal, and fenugreek seeds in a large bowl. Cover with cold water by at least 2 inches and soak for 6–8 hours or overnight.
Drain the soaked rice and lentils, reserving about 1 cup of the soaking water. Transfer to a blender and blend, adding the reserved soaking water a little at a time, until the batter is smooth and pourable — it should be slightly thicker than a crepe batter but thinner than a pancake batter, with a consistency similar to heavy cream. You may need up to 1 cup of water total.
