Kolhapuri cuisine is known for its bold, fiery depth, and this vegetable curry delivers every bit of that intensity using a completely from-scratch masala paste. The magic starts with toasting whole spices ā coriander, cumin, cloves, cinnamon, poppy seeds, sesame seeds ā alongside golden coconut and softened onion before everything gets blended into a vivid, deep-red paste that forms the soul of the dish. Because you're building every layer yourself, there are no pre-packaged spice blends or processed shortcuts that might sneak in unwanted synthetic preservatives like BHA or BHT. Hearty vegetables ā potato, carrot, cauliflower, green beans, and peas ā simmer low and slow in that jammy, tomato-enriched masala until everything is tender and thoroughly coated in flavor. The result is a rich, warming curry that tastes genuinely complex without relying on anything artificial to get there. A handful of fresh cilantro on top is all the finishing touch it needs.
