This bold, deeply spiced curry pulls from the fiery culinary tradition of Kolhapur, layering toasted whole spices, charred coconut, and two kinds of dried red chilies into a paste that becomes the soul of the dish. Every vegetable ā cauliflower, green beans, carrot, potato, and peas ā simmers until tender and fully coated in that rich, jammy masala base. Because the entire recipe is built on plants, spices, and coconut, there's no need to scrutinize labels for hidden mammal-derived ingredients, which can be an exhausting part of navigating restaurant menus or packaged foods. The process of building the Kolhapuri masala from scratch ā toasting seeds, caramelizing onion, blending everything into a thick, deep-red paste ā is genuinely satisfying and makes the kitchen smell incredible. Tomatoes cooked down into the base add a subtle brightness that balances the heat from the chilies without dulling any of the complexity. This is the kind of curry that tastes like it took all day, even though it comes together in a single pot with straightforward, accessible ingredients. Finish it with a handful of fresh cilantro and serve it hot for a meal that's as comforting as it is impressive.
