A platter piled high with crisp carrots, celery, cucumber spears, colorful bell pepper strips, and fresh broccoli and cauliflower florets is already a crowd-pleaser — but the real star here is the creamy cashew ranch dip holding it all together. Raw cashews soaked in boiling water and blended with lemon juice, apple cider vinegar, and a classic blend of dill, chives, garlic, and onion powder produce a dip that is genuinely rich and tangy, with none of the dairy required. Store-bought dips and dressings can be a minefield when you're avoiding sesame, since it hides in unexpected places like flavoring blends and shared production lines. Making this one from scratch means you know exactly what's in the bowl. The vegetables are arranged by color and type on a large platter, which makes it as visually striking as anything you'd see at a catered event. It works beautifully as a party appetizer, an afternoon snack, or a light starter before dinner — and the dip can be made ahead and chilled while you prep the veggies.
