A colorful platter of crisp carrots, celery, cucumber spears, bell pepper strips, broccoli, and cauliflower is already a crowd-pleaser — but it's the creamy cashew ranch dip that makes this one genuinely exciting. Raw cashews are soaked, then blended with lemon juice, apple cider vinegar, and a classic ranch herb blend of dill, chives, and parsley until the result is completely smooth and rich without a drop of dairy or any animal product in sight. For anyone navigating a red meat allergy, this kind of spread is a relief — every single ingredient is plant-based and straightforward, so there's no second-guessing what's in the bowl. The dip chills while you prep the vegetables, meaning the flavors have time to settle into something that tastes far more complex than the ingredient list suggests. Arranging the vegetables by color and type on a large platter makes it look like something from a catered event, even though the whole thing comes together with a cutting board and a blender. It works equally well as a party appetizer, an afternoon snack, or a light starter before a bigger meal.
