A platter of crisp, colorful vegetables is always a crowd-pleaser, and this one comes with a creamy cashew ranch dip that genuinely rivals anything you'd find in a bottle. Many store-bought dips and dressings sneak in gelatin or other animal-derived thickeners, but this one gets its luscious, velvety texture entirely from blended raw cashews — no stabilizers, no shortcuts. Soaking the cashews first is the key step that makes the dip silky-smooth rather than grainy, and the combination of dill, chives, garlic, and a hit of apple cider vinegar nails that classic ranch flavor without any of the usual additives. The vegetable lineup — carrots, celery, cucumber, bell peppers, broccoli, and cauliflower — gives you a rainbow of textures and a satisfying crunch with every dip. Arranged by color on a large platter, this is the kind of spread that looks like you put in way more effort than you actually did. It works beautifully as a party appetizer, a snack board, or a light starter before dinner, and the dip can be made ahead and chilled until you're ready to serve.

Place the cashews in a bowl and cover with boiling water. Soak for 30 minutes, then drain and rinse thoroughly.
