A platter of crisp, colorful vegetables surrounding a creamy, herb-flecked dip is one of those crowd-pleasing spreads that looks like you put in way more effort than you actually did. The star here is the cashew ranch — soaked raw cashews blended with lemon juice, apple cider vinegar, onion powder, garlic, dill, chives, and parsley until completely silky smooth. It delivers that cool, tangy ranch flavor you crave without any dairy, and every single ingredient is naturally free of stimulants, so there's nothing here to keep you up at night. Carrots, celery, cucumber, red and yellow bell peppers, broccoli, and cauliflower bring a satisfying crunch and a gorgeous rainbow of color to the platter. Arranging each vegetable in its own little cluster makes the whole thing look almost too pretty to eat — almost. This is the kind of recipe that works just as well for a casual weeknight snack as it does for a party table, and the dip can be made ahead and chilled while you prep the vegetables. A scatter of fresh dill on top of the dip is a small touch that makes the whole presentation feel genuinely special.
