In a small saucepan, combine the rice vinegar, water, sugar, and salt. Heat over medium heat, stirring, until the sugar and salt dissolve, about 2 minutes. Remove from heat, add the daikon and carrot matchsticks, and let them sit at room temperature for at least 20 minutes, until slightly softened and tangy.
While the pickles rest, press the tofu: wrap the block in a clean kitchen towel or several layers of paper towels and press firmly for 5 minutes, then cut into 1/2-inch-thick planks or rectangles.
