Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Spread the walnuts in a single layer on the baking sheet and toast for 7–8 minutes, until fragrant and lightly golden. Transfer to a cutting board, let cool for 5 minutes, then roughly chop.
In a small bowl, stir together the ground flaxseed and water. Let the mixture rest for 5 minutes, until thickened and gel-like.
