Bitter gourd is one of those vegetables that rewards patience, and this stuffed version is a masterclass in coaxing out its best qualities. Each karela is packed with a deeply spiced filling of sautéed onion, tomato, ginger, garlic, and a warm lineup of cumin, coriander, turmeric, and amchur — that last ingredient, dried mango powder, adding a bright, tangy lift that balances the gourd's natural bitterness beautifully. The chickpea flour toasted right into the filling gives it a nutty, cohesive texture that holds together perfectly inside each cavity. Salting and rinsing the karela before stuffing is the key step that tames any harshness, so the finished dish is complex and savory rather than overwhelming. Everything comes together in a single skillet, where the stuffed gourds slowly brown and wrinkle until the skin is caramelized and the flesh is completely tender. There's no dairy, no eggs, no animal products of any kind — just vegetables, spices, and oil working in harmony. Serves four, and honestly makes a stunning centerpiece alongside rice or flatbread.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end — do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
