Bitter gourd is one of those vegetables that rewards patience, and this dish is a masterclass in coaxing out its best qualities. The karela are salted, rinsed, and gently squeezed before cooking ā a crucial step that tames the bitterness and leaves behind a pleasantly earthy depth. Each gourd is packed with a jammy, spiced filling of onion, tomato, ginger, garlic, and chickpea flour toasted until nutty, layered with warm spices like cumin, coriander, turmeric, and a hit of amchur for bright, tangy contrast. The stuffed gourds are then pan-cooked low and slow until the skins turn deeply wrinkled and caramelized, which is exactly when the magic happens. Every ingredient here is straightforward plant-based pantry staple, so there's no need to scrutinize labels or worry about hidden animal products or seafood derivatives sneaking in. A squeeze of lemon and a scatter of fresh cilantro at the end lifts the whole plate and makes it feel genuinely restaurant-worthy. If you've been curious about cooking with bitter gourd but weren't sure where to start, this is the recipe that will make you a convert.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
