Bitter gourd is one of those vegetables that rewards patience, and this stuffed preparation is the reason cooks keep coming back to it. Each karela is salted and rinsed to mellow its signature bitterness before being packed with a deeply spiced filling of onion, tomato, ginger, garlic, and chickpea flour toasted until nutty and jammy. The amchur adds a bright, tangy lift that plays beautifully against the warm heat of red chili and the earthiness of cumin and coriander. Slow-cooking the stuffed gourds in a covered skillet lets the skin wrinkle and caramelize into something genuinely craveable. Everything in this dish is naturally plant-based and built entirely from whole spices, fresh aromatics, and pantry staples — no grains of any kind make an appearance, so it fits grain-sensitive eating without any substitutions or workarounds. A squeeze of lemon and a handful of fresh cilantro at the end keep things bright and fresh. It's the kind of recipe that looks impressive on a plate but is really just good technique and bold, honest flavors doing all the work.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end — do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
