Bitter gourd is one of those vegetables that rewards patience, and this stuffed version transforms it into something genuinely crave-worthy. Each karela is hollowed out, salted to draw out bitterness, then packed with a spiced filling of onion, tomato, ginger, garlic, and chickpea flour that turns jammy and nutty as it cooks. The amchur adds a bright, tangy lift that balances the earthiness of the spices beautifully. Since the entire dish is built around vegetables, legume flour, and pantry staples, there's no need to scrutinize labels or worry about hidden animal proteins sneaking into your meal. The slow pan-fry method is what really makes this dish — the skin gets deeply browned and wrinkled, almost caramelized, while the filling stays moist and intensely flavored inside. A squeeze of lemon and a scatter of fresh cilantro at the end cut right through the richness and make every bite feel complete. If you've written off bitter gourd before, this recipe is a very good reason to give it another chance.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end — do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
