Bitter gourd has a devoted following across South Asian kitchens, and this stuffed version shows exactly why the vegetable deserves so much more attention. Each karela is hollowed out, salted to draw out some of that signature bitterness, then packed with a deeply spiced filling of onion, tomato, ginger, garlic, and chickpea flour that turns jammy and nutty as it cooks. The amchur adds a bright, tangy lift that plays beautifully against the warm heat of red chili and the earthiness of cumin and coriander. Pan-frying the stuffed gourds low and slow gives the skin that irresistible wrinkled, caramelized exterior while the filling stays moist and fragrant inside. This dish is entirely plant-based, so it fits comfortably within a pescatarian lifestyle without any substitutions or workarounds needed. A squeeze of lemon and a handful of fresh cilantro at the end keep things lively and fresh. If you've been curious about karela but intimidated by the bitterness, this recipe is the perfect place to start.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
