Bitter gourd is one of those vegetables that rewards patience, and this stuffed version transforms its sharp, assertive flavor into something genuinely craveable. Salting and rinsing the karela first draws out excess bitterness, so by the time the gourds hit the pan, they're primed to soak up every bit of that spiced filling. The stuffing itself is a deeply savory mix of onion, tomato, ginger, garlic, and warm spices, with chickpea flour toasted right in the pan to give it body and a subtle nuttiness. A pinch of amchur ā dried mango powder ā adds a bright, tangy lift that balances the heat from the chili powder beautifully. Everything here is built from whole vegetables, aromatics, and pantry spices, so there's no grain-based filler or hidden ingredient to second-guess. The karela cook low and slow until the skin is wrinkled, caramelized, and almost lacquered, with the filling pressed snugly inside. Finished with fresh cilantro and a squeeze of lemon, this is the kind of dish that makes you rethink everything you thought you knew about bitter vegetables.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
