Bitter gourd is one of those vegetables that rewards patience, and this stuffed preparation is exactly the kind of dish that turns skeptics into believers. The karela are salted and rested first, which draws out some of their natural bitterness before they ever hit the pan ā a small step that makes a real difference in the final flavor. Inside each gourd is a deeply savory filling built from onion, tomato, ginger, garlic, and a warm lineup of spices including cumin, turmeric, amchur, and toasted chickpea flour, which gives the mixture a nutty, almost meaty richness that holds together beautifully. Every component in this recipe is whole, plant-based, and completely free of fungi or fungal derivatives, so there's no need to scrutinize labels or swap anything out. The karela are pan-cooked low and slow until the skins are wrinkled and caramelized, developing a slightly crispy exterior that contrasts perfectly with the jammy, spiced filling inside. A squeeze of lemon and a handful of fresh cilantro at the end brighten everything up and make the dish feel complete. It's the kind of recipe that looks impressive on the table but comes together with straightforward technique and pantry-friendly ingredients.

Trim both ends of each karela and use a sharp knife to make a deep lengthwise slit down one side, stopping about 1/2 inch from each end ā do not cut all the way through. Use a small spoon to scrape out and discard the seeds and white pith from inside each gourd.
Rub 1 tsp of the salt all over the outside and inside of the karela. Place them in a colander set over a bowl and let them sit for 30 minutes. Rinse thoroughly under cold running water, then squeeze gently and pat dry with paper towels.
